Colombia - Aroma Nativo PB 1178

This exceptional lot was hand-selected from the ripest Aji cherries, ensuring the highest quality. The cherries underwent a complex fermentation process in a carefully controlled anaerobic environment, followed by depulping. They were dried for several days to reach optimal moisture content before being rehydrated with selected yeasts and bacteria. After meticulous processing, the coffee was dried on raised beds for 15 days, followed by a crucial 3-month stabilization phase in a meticulously controlled temperature environment.

KB Coffee Roasters, founded in 2010 by Nick Piègay after returning from Australia, pioneered specialty coffee in Paris. Based at 53 Avenue Trudaine in Pigalle, they roast their own beans since 2015 and operate the Back in Black roastery café, serving seasonal coffees and Aussie-inspired hospitality.
