About ZAB Café

ZAB Café began in 2016 when founder Edwin Chareton, after years in restaurants and as a barista, wanted Montrealers to enjoy specialty coffee roasted locally rather than relying on roasters from elsewhere. His vision grew into Zab Roasters and then into a collective of cafés and a roastery that emphasize experimentation, funkiness and community engagement. The team joined forces with Paquebot in 2017, helping to drive Montreal’s coffee wave. Their unique skull-and-coffee-plant logo reflects a playful but serious dedication to quality and the brand has become a bright star of the city’s coffee scene, winning multiple Th3rdwave Roaster of the Year awards. Zab operates several cafés across Montreal, serving an array of classic and co‑fermented coffees and fostering local partnerships.
