The Chiroso project celebrates the producers of Urrao, Antioquia. Located at 1800m, ten small family farms learn new fermentation techniques to reveal the potential of the Chiroso variety. This lot is fermented anaerobically for three days, intensifying fruity aromas and developing a creamy texture.

ZAB Café, based in Montréal, Quebec, is a specialty coffee roaster and café collective founded by Edwin Chareton in 2016 to bring locally roasted, high-quality coffee to Quebec. Known for its skull‑and‑coffee‑plant logo and experimental, funky coffees, ZAB combines passion, community focus and multiple café locations.
