The three-time Italian Barista Champion Francesco Sanapo launched Ditta Artigianale in Florence in 2013 with the goal of dragging Italian coffee culture into the specialty era. Partnering with Caffè Corsini's Patrick Hoffer, he created a micro‑roastery dedicated to sourcing world‑class beans and roasting them with precision. Ditta Artigianale operates several cafés in Florence and a flagship in Milan, combining Italian hospitality with third‑wave coffee techniques. By pairing high‑quality beans with expert roasting, they strive to make specialty coffee accessible to Italian drinkers and to challenge traditional expectations of espresso.
