This microlot from Jairo Arcila is a sharp, juicy reminder that fermentation is where the magic happens. It’s 100% Castillo, crafted to hold its own in the field while delivering in the cup. This batch went through a 72-hour dry anaerobic fermentation with cranberries added, resulting in a vivid, clean cup with flavors of cranberry juice and red grapes.
