Whole beans from Guji in Ethiopia, it is a heirloom natural process. A few hours after roasting, the first V60 brew we did tasted: spices, blue and black fruits with a bit of fermentation.

Substance Café is a small specialty coffee shop and micro-roastery in Paris offering a reservation-only, countertop tasting experience led by Joachim, the single barista and roaster.
