About Ilse
Ilse Coffee began in 2019 when Lucas Smith and Rebecca Grossman set out as a two‑person roasting company. Named after Lucas’s grandmother to honor the strong women in his life, the roastery started in Stamford, Connecticut, before moving to North Canaan, where it operates out of a converted auto repair shop. The founders want to showcase the world’s best coffees and open people’s eyes to what coffee can be. They roast light, expressive coffees in small batches to highlight clarity and balance, and they work directly with smallholder producers to ensure traceability and sustainability. Their cafe‑roastery at 35 Railroad Street in North Canaan serves these coffees with elegance and hospitality, fostering community around coffee.
