This coffee has a distinctive chamomile-like flavor and a rich sweetness like brown sugar. As it cools, it also has a bright apricot-like flavor. The farm's signature Java variety is subjected to a short anaerobic fermentation followed by a washed finish, resulting in a sweeter finish that takes advantage of the floral flavor characteristics of Java.
