During harvest, perfectly ripe coffee cherries are hand-picked, sorted, and floated to remove defects. The cherries are then sealed in stainless steel tanks and dosed with carbon dioxide to limit oxygen exposure and slow sugar breakdown, enhancing fruit-forward flavors and body while preventing over-fermentation.
