Jairo Arcila and his team selectively harvest only the ripest cherries, which are then hand-sorted and floated at Villarazo to remove defects. The cherries undergo a second floating stage using recycled water, ensuring sustainable water management. After a final hand-sorting, they are subjected to a 45-hour aerobic fermentation, enhancing their complexity and flavor.
