About Sybil Coffee
Sybil Coffee began as the personal micro roasting project of Queens‑based roaster Steve Thwe. Driven by a deep fascination with coffee’s complexity and the way time, place and craft shape each cup, he started roasting coffee at home and exploring the vibrant flavours found in single origins. What began as a private pursuit evolved into a desire to share carefully curated coffees more broadly. Sybil sources beans that exhibit clear fruit notes and clean sweetness and roasts them lightly to showcase those vibrant expressions. As a small operation, Sybil releases limited batches and occasionally pauses production while preparing new offerings, reflecting a thoughtful, craft‑driven approach.
