This rare Bourbon Ají grows between 1,700 - 1,850 m, where cool mountain air and steady shade slow down maturation, building dense sweetness. Cherries undergo an anaerobic washed process, resulting in a cup bursting with peach candy, sour cherry, and apricot nectar, yet remarkably clean and structured.
