Dona Francisca and her husband Oscar Chacon of Las Lajas own and manage their micro mill and specialty coffee farms in the foothills of the Poas volcano in Costa Rica. They focus on environmentally friendly practices and measure the brix content in coffee cherries to determine the best harvest time for a sweet and fruit-forward profile.
