Fondation is our signature espresso. It is a medium roast where balance and sweetness are the main targets. Currently, it consists of a lot of red bourbon grown by Luis José Valdez in Caldas, Colombia, and a lot from Nova Resende in Minas Gerais, Brazil. When well adjusted, you will have a great balance between sweet acidity and cocoa bitterness.
