Sey is a contemporary micro roastery and café based in Brooklyn, New York. Founded by Lance Schnorenberg and Tobin Polk (formerly Lofted Coffee), the roaster pursues the finest, most dynamic and complex coffees through transparent relationships and precise roast development to express each coffee's natural character.

Hailing from Brooklyn, Sey Coffee was founded by Lance Schnorenberg and Tobin Polk after roasting under the name Lofted Coffee from a Brooklyn loft. As they searched for a café space, they landed in Bushwick, establishing a roastery that became a destination café. Renamed Sey, the micro‑roastery pursues the finest, most dynamic and complex coffees. Their approach treats roasting as a delicate process that should reveal, not mask, the inherent qualities of each coffee. Through careful roast development and constant analysis, they aim to let the coffees speak for themselves, delivering a crystal‑clear expression of each lot's character. Sey builds and progresses relationships across the supply chain to support producing partners and ensure transparency. The roastery and café at 18 Grattan Street in Brooklyn offers a high‑tech roastery where the owners and team search the world for sustainable, exceptional beans.
