Illumination is an advanced, washed, carbonic maceration process. Cherries are grown at elevations exceeding 6200ft in rich, volcanic soils. The process begins with harvesting only the ripest cherries, then pulping them, creating an anaerobic environment ideal for controlling fermentation. Pomegranate, ripe nectarine, with a long, black tea-like finish are the hallmarks of this distinguished cup.
