Nestor, 22 years old, represents El Diviso, his family farm in southwestern Colombia. He focuses on tasting labs, sampling roasts, and exploring new processing possibilities. El Diviso aims to improve cup quality while recognizing traditional definitions. They experiment rigorously with processes and microorganisms to create unique cup profiles.
