After removing impurities from the coffee cherries, pulping is performed. The cherries are fermented for 150 hours in a sealed tank with fermentation culture. The drying process takes place under direct sunlight for 2-3 days and in the shade for 12-13 days, achieving the target moisture content. The coffee features a refreshing acidity reminiscent of lime juice and a sweetness akin to syrup.
