About Quietly Coffee

Quietly Coffee was founded by Lee Knuttila after leaving Toronto for the Ontario countryside, with a mission to “block out industry trends” and focus solely on coffee — single-origin, seasonal, and batch-by-batch — to showcase each lot’s unique flavors. The roastery’s approach grew from Knuttila’s study and work in specialty coffee (including time at Cut Coffee) and emphasizes curiosity, exploration, and a commitment to doing better on social and political links between producers and drinkers. Quietly emphasizes an ethical mandate: transparency, equitable trade, and tangible support for producers. The roastery prioritizes wholesale partnerships (cafes and shops) as the primary way to experience their coffee and deliberately limits scale to protect quality. The site notes limited production capacity and frequent sell-outs because roasting is done Monday–Friday on a Probat roaster.
