About
La Victoria brings together producers from the Santa Maria and Palermo regions in Huila, Colombia. Their farms are located at an altitude of 1700-2200 meters above sea level, around the slopes of the Huila volcano. The main coffee varieties are Castillo, Pink Bourbon, Caturra, Chiroso, San Bernardo, and Typica. To ensure quality, farmers carefully select only ripe cherries, ferment them for 24 hours, followed by an additional ferment for 36-72 hours after removing the pulp. The coffee is then washed and typically dried on terraces.
