Laayyoo is a striking expression of high-elevation Ethiopian terroir, produced by smallholder farmers near Teraga. Harvested between 2200–2350 meters, cherries are delivered at night to limit exposure to heat. Two distinct drying protocols are used to promote clarity and complexity.
