Insomnia Coffee owners Evan Aldrete and Tyler Geel launched Dapper & Wise in 2012 as a tasting room and roasting facility in Portland’s western suburbs. Their mission is to source and roast the best coffees they can find, to keep inventing ways to treat employees and producers better, offer the tastiest cups and teach their friends about coffee in a friendly, unpretentious way. They focus on building long‑term relationships with farmers, roasting on a vintage Probat to highlight unique origin flavours and using coffee as a medium for connection and fun. Visitors can stop by their downtown Hillsboro roastery and tasting room behind Insomnia Coffee to sample relationship coffees and learn about brewing.
