This coffee is harvested only at the right degree of ripeness, then immersed in water and hand-selected to remove any defects. The cherries ferment for 30 hours underwater before being depulped. The parchment is carefully washed and slowly dried at controlled temperature until it reaches the perfect moisture level. Ideal for espresso and filter – clean, intense, surprising.
