This coffee features a unique Acetic Natural processing method, enhancing its distinct flavors. The beans are fermented in plastic tanks, promoting the growth of aerobic bacteria, and then dried on raised terraces. The Catiope variety, discovered by Elkin, combines Caturra with Ethiopian lines, resulting in a delightful cup with notes of fermenty, pineapple, and ripe grape.
