This coffee is grown in the south of Minas. The hot climate allows for natural processing. Cherries are dried under the sun until they reach 12% moisture content, resulting in a unique flavor. Guaxupe is one of the largest specialty cooperatives in the world, with around 12,000 members in Minas Gerais and Sao Paulo.
