This limited micro-lot comes from a small processing station in Hatessa, where only 5 to 8 tons of natural coffee are produced annually. The cherries undergo a 72-hour anaerobic fermentation, enhancing their nuanced flavors. After fermentation, they are dried on raised beds for 25 days, ensuring uniform moisture reduction. This coffee features layered notes of plum, blood orange, and some blackberry.
