This decaf coffee uses a natural compound called ethyl acetate (EA) to remove caffeine. Often referred to as sugarcane decaf, the EA used in this process is derived from molasses. The EA method is relatively simple, where coffee beans are soaked in water and passed through EA, which binds to caffeine and removes it, preserving most flavor compounds.
