These Ethiopian heirloom and landrace are separated by batches and processed through Limited Oxygen Fermentation. This process enhances clarity, fruit notes, and sweetness. The cherries ferment in an oxygen-controlled environment for about 24 hours before drying slowly on open-air tables.
