A vibrant expression of the red honey process, Pukari takes its name from the Quechua word for ‘to glow’ — a reflection of the radiant hue this coffee develops as it slowly dries in the Andean sun. This Ethiope variety is carefully selected at peak ripeness, then pulped and dried with its mucilage fully intact on raised beds. The red honey method imparts a distinctive sweetness and clarity, enhanced by constant hand-turning over 18–20 days to prevent over-fermentation and encourage even airflow. Pukari captures the delicate dance between control and nature. The result is a cup that glows with stone fruit brightness and nutty warmth — a soft mandarin acidity wrapped in creamy almond and ripe peach.
