Historically, Mexican coffee was viewed as inexpensive and low-grown. Today, high-grown Mexican coffee has complex acidity and balanced sweetness. Alejandro Martinez owns a 250-hectare farm called San Jose, where he grows Anacafe 14. The coffee is picked ripe, fermented, and dried for 32 days.
