This is not just any decaf; it's a 'new discovery'. This lot from the advanced El Vergel farm in the Trima region is a rare cup made using the anaerobic natural Swiss water process decaf. Rich tropical guava flavors take center stage, complemented by refreshing lemon-lime acidity. As the cup cools, a pleasant bitter finish of cacao nibs lingers, offering a complex and balanced taste. The meticulous fermentation and drying process by the Baiter family, along with 45 days of low-temperature aging, preserves an astonishingly rich flavor even after caffeine removal.
