About
Karimikui processing station is owned and operated by Rung’eto Farmer Cooperative Society (FCS). It has 2,591 farmers delivering coffee to the station, grown at altitudes of 1600 to 1700 meters above sea level. Farmers hand-pick ripe cherries and deliver them to the processing station. Upon arrival, a 'Cherry Clerk' oversees sorting and only accepts dense, ripe cherries. After reception, the cherries are pulped and fermented for about 12 to 24 hours. After fermentation, the coffee is washed in clean water and soaked for 24 hours. The beans are then laid out to dry on raised beds, with staff regularly turning them to ensure even drying.
