At Hacienda Sonora, hand-picked cherries are first dunked in water for floater separation, before the beans are dried inside the fruit. The cherries are dried on a black tarp for 12 days, preserving cup quality. After drying, the coffee is sorted and rested before being processed. Hacienda Sonora has over 20 different varieties of plants and is known for its unique processing techniques.
