The coffee cherries are delivered by around 800 independent farmers from ten nearby villages. The high altitude and cool temperatures are ideal for slow maturation, resulting in denser beans with a sweeter and more complex flavor. The cherries undergo anaerobic fermentation for 7 days and are slowly dried for 30 days, yielding a cup of high complexity and intensity.
