This grade 1 microlot is from Guji Kercha station in Banko Michicha, processed with extended cherry fermentation in vacuum sealed stainless steel tanks. The cherries are sorted for ripeness and fermented in sealed tanks to enhance flavor while preventing spoilage. After fermentation, they are dried traditionally on raised African beds.
