About Moving Coffee Roastery

Moving Coffee was founded by Edmond and his wife Shirley in Hong Kong in 2012 as a small mobile specialty coffee project at markets and pop-ups. Edmond, with a background in Food Market Analysis and early Q-Grader credentialing in Hong Kong, consulted across Asia before dedicating himself to Moving Coffee. In 2014 they relocated to Vancouver, rebuilding the business as a roastery-first model that evolved from weekend pop-ups to a dedicated roasting studio and tasting space. The company emphasizes single-origin coffees, refined roast profiles, education, competitions and wholesale relationships. Moving Coffee highlights careful sourcing, calibrated sensory work (Q-Grader/CQI/G-Grader credentials and recertifications), and a philosophy of moving specialty coffee forward by focusing on balance, cleanliness and sweetness in their roast approach.
