This microlot was processed using the Black Honey method, where coffee cherries are pulped without water, allowing a portion of the sticky mucilage to remain on the beans. The beans are then fermented under the sun for two days, enhancing their flavors. After fermentation, they are dried on raised beds for up to 40 days, resulting in a unique and vibrant character.
