Leaves Coffee

The name “LEAVES” reflects a desire to keep growing and learning, like fallen leaves nourishing new ones. Founder and roaster Yasuo Ishii, a former professional boxer from Fukagawa in Tokyo, entered the coffee world after receiving a bag of beans in 2010. He opened Leaves Coffee Apartment in 2016 and launched the roastery in Kuramae in 2019, where he now roasts on Probat UG‑15 and Stronghold S7X machines. Ishii’s concept of “From the town roastery to the world” drives the business. He aims to become a world roasting champion and build a brand that will last a century. Leaves Coffee is known for light roasts that maximize sweetness and aroma, producing clean, balanced cups that showcase the natural character of each origin.
