This coffee was grown by Jairo Arcila at the farm Santa Mónica and harvested from Java varietal trees. The cherries undergo meticulous hand-sorting and a 45-hour aerobic fermentation, resulting in a unique profile characterized by intense fruitiness and sweetness.
