More than 3,500 smallholder coffee growers near Kayanza, Burundi deliver cherries to the Kibingo washing station. They are organized in groups and hand-pick cherries that are fermented to enhance flavor. This year is challenging due to government regulations affecting production. The washing station, guided by Eddy Nkanagu, has developed innovative processes to improve the flavor profile.
