FUSHI COFFEE ROASTERS opened on Ishigaki Island on 27 April 2022. "Fushi" (ふし) means "star" in the local Yaeyama dialect, chosen to convey the wonder of the island’s night sky through coffee. The "S" in the name honors family, friends, distant supporters, and customers. Founders Koichi Matsumoto, a JACRC champion barista, and Sayaka Matsumoto, an illustrator, emphasize transparent, fair‑trade sourcing of high‑quality specialty beans. Their mission is to share the culture and story behind each bean, inviting both enthusiasts and newcomers to experience coffee’s depth and joy.
