At Lalesa in Gedeb, ripe cherries rest on raised beds for a day to concentrate sugars, are pulped, then dry on covered beds for 14–18 days in a Red Honey process. The cup is fruit-led: cantaloupe and mandarin peach over a gentle milk chocolate baseline, with a clean finish acidity.
