About El Condor Coffee Roasters

El Condor Coffee Roasters opened its first 500‑square‑foot café at 95 Greenwich Avenue in 2022, created by hospitality veterans Nicolas Simon and Mucjon Demiraj through their Wilcuma group. Designed with a Palm Springs mid‑century vibe, the all‑day café flips the traditional coffee shop model by offering table service, open tabs, reservations, power outlets at every seat and a full menu with beer and wine. The business roasts its own coffee on site in partnership with Tenfold Coffee’s Jacob Ibarra, sourcing beans from Sumatra, Ethiopia, Brazil, Guatemala and Panama. El Condor combines smoother Italian‑style espresso with American milk‑drink traditions to create lighter, sweeter blends, and Chef Youssef Aderdour leads a menu of seasonal baked goods and healthy dishes. The founders focus on fair compensation, starting wages at $20 per hour with revenue sharing, and plan to expand to additional locations.
