This microlot is grown at 1,825 meters above sea level, surrounded by native trees and near the El Injerto river. The microclimate and calcareous soil favor slow and uniform maturation, resulting in complex and consistent coffees each year. In the cup, Don Pilo stands out for its balance and cleanliness, with notes of green plums, chocolate, toasted almonds, and panela. Its bright acidity and silky texture make it an elegant coffee with marked sweetness and a long, enveloping aftertaste.
