About Coava Coffee Roasters
Coava — the Turkish word for unroasted green coffee — was started by former barista and roaster Matt Higgins out of his garage in 2008. Frustrated by the lack of transparency in the industry, he built relationships directly with producers and perfected his roasting technique to highlight the natural sweetness and complexity of each coffee. The company quickly gained a reputation for quality and innovation, helping to shape the third‑wave coffee scene in Portland. Today Coava operates several brew bars and a roastery in Portland as well as a shop in San Diego. The team continues to focus on single‑origin coffees, working closely with smallholder farmers and cooperatives to achieve sustainable quality.
