Cherry Lab was born from a personal desire to drink truly exceptional coffee — not occasionally, but honestly. The roaster curates beans from countries such as Brazil, Colombia, Ethiopia, Guatemala, Indonesia, Jamaica, Kenya, Panama, Peru, Rwanda, the United States and Yemen, and roasts them to order so each origin’s character can shine. Located in Tokyo’s Asakusa neighbourhood, the tiny café operates as a ‘fresh roast to order’ specialty coffee shop. It offers coffee reservations and subscriptions, inviting guests to explore different origins and processing methods. The roasting philosophy values patience and presence, letting the beans shine in their own light rather than over‑tampering.
