About Birch Coffee
Birch Coffee begins at origin, travelling to connect with farmers behind each cup. They view direct trade as forging lasting relationships with growers, supporting their commitment to quality, sustainability and continual improvement. Each coffee is roasted in Long Island City with a unique profile that highlights the flavours of its origin. The journey from crop to cup is shaped by many hands, from farmers and harvesters to processors, exporters, roasters and baristas. Founders Jeremy Lyman and Paul Schlader met in 2005, bonded over hospitality and good coffee and opened their first shop in 2009. Paul now regularly visits origin to build relationships and obsess over processing methods, while Jeremy focuses on creating inviting spaces and exceptional customer experiences. Giving back is woven into Birch Coffee’s ethos. They mentor budding coffee shop owners and share their knowledge through industry events like Coffee Fest. In 2019 they created the Bully Blend, donating 100% of profits to pitbull rescues such as Muddy Paws and Angel City PitBulls, reflecting their belief that it’s more important to give than to receive.
