Batian is a cultivar developed to improve yield and disease resistance while maintaining a clean, sweet cup profile. This lot undergoes controlled pre-fermentation and measured dry fermentation to enhance clarity and sweetness. After washing, it is dried slowly on raised beds, protecting its structure and enhancing its qualities.
