Apollon’s Gold began as a small roaster in Tokyo rooted in Japan’s rich culture of craftsmanship. Local support and key partnerships helped the team blossom onto the contemporary coffee scene. The roastery takes a terroir‑driven approach: it sources freshly harvested, direct‑trade coffees and uses classic processing methods to highlight each varietal’s unique characteristics. Roasting in small batches with passion and precision allows them to offer ultralight and carefully calibrated profiles that showcase the complexity and clean sweetness of each origin. Apollon’s Gold operates a flagship roastery and café in Akasaka, where visitors can enjoy a full lineup of beans and numerous pour‑over options, and the Kitanomaru espresso bar, an experimental single‑origin bar featuring 10–20 espresso origins.
