This coffee marks the 3rd year of collaboration with Ingrid Olivo. The beans, coming from Montagu farm in Juayùa, bring flavors of ORANGE, PEACH, NOUGAT, and VANILLA, ideal for ESPRESSO and FILTER. Ingrid, facing a tough year, showed resilience and now offers her first production of Honey process, resulting in a perfectly balanced and complex coffee.

This coffee was purchased directly from Randolfo at a price of $2.66USD/lbs, with advance payment to ensure he had the cash to pay his employees. Randolfo Pacheco is an independent producer involved in the Colis Resistencia. He faces governmental distrust and corruption, as well as issues with a Canadian mining company operating without community consent. Despite challenges, he remains hopeful and focused on his direct relationships with buyers.

Partnership with Semilla allowed the Monkaaba group to directly receive $4USD/lbs for this batch, offering a better price compared to regional cooperation or Fair Trade certification.

DÉCAF GROUPE MONKAABA – Espresso/Filtre

The Carlos Honey Blend is directly paid to the producer, juxtaposing its price to the minimum and other coffee trade benchmarks, emphasizing the environmental commitment of Carlos, who uses natural components like mycorhiza and purified water for irrigation. The honey process of this coffee integrates the rich flavors by letting the beans dry in the mucilage.

CARLOS HONEY BLEND- Espresso/Filtre

The history of Rosa's plantation dates back to the end of the 1880s, with her grandparents being the first to cultivate coffee. The farm was passed down to her from her mother, and she has recently taken charge of marketing her own coffee.

Packed with flavors of dark cherry, caramel, and hazelnut. Pairs beautifully with any type of milk. A close relationship with Mauricio Salaverria for four years, purchasing directly from his farm Divisadero. He’s a top performer in the Cup of Excellence in El Salvador.

WASHED MAURICIO - Espresso/Filter

This lot was paid directly to Mauricio at $3USD/lbs. Grown in Divisadero farm located in Apaneca, El Salvador. A Washed process coffee with a profile of caramel, hazelnut, and dark chocolate, best enjoyed as espresso or filter.

MAURICIO MEDIUM – Espresso/Filter

A product of fifth-generation producer Mauricio who builds his reputation on extended fermentation and drying times, resulting in extremely fruity notes.

MAURICIO ANAEROBIC – filter/cold brew

This coffee comes from Carlos Pola's farm, Las Brisas, located in San Juan de Dios, Juayúa, El Salvador. The lot size was 309 lbs processed with a natural method at an altitude of 1350m. This lot was purchased directly from the producer at a fair price.

CARLOS QUEEN HONEY BEE - espresso/filtre

Maragogype, known as Elephant Bean, when cultivated over 1500m altitude and volcanic soil, yields an exceptional cup. Notes of grape, hibiscus, and chocolate are present due to the painstaking natural drying process, providing a rich body and silky texture.
